rebel: I betcha' some wimmens will take over the cooking... As far as the eggs are concerned, low and slow is the way to go. If the heat is too high, the eggs will cook too fast and turn into rubber...yuck!

ger yourself two slabs of bacon and about two dozen eggs. end.

i did this last weekend! here is what we had:

4 dozen eggs
4 packages sausage
2 packages bacon
1 package frozen hash browns (diced)
3 dozen tortillas
1 jar salsa
1 package cheese

then i also cut up peppers/onions a couple of days ahead of time and put them in tupperware so i didn't have to do it that morning. i did:

1 onion
2 of each color pepper (orange, red, green yellow)
3 jalapenos, unseeded
3 cloves of garlic

i didn't end up using even half of the peppers, but you can freeze them afterwards.

with that... we had WAY too many eggs. about the right amount of potatoes and bacon, and a little too much sausage.

Grab a bag of Jimmy Dean's Breakfast Skillets...if you've never had these they come in either bacon, ham, or sausage plus cubed potato's, green and red peppers and onions...throw said included ingredients in a large skillet and saute, scramble your eggs in a separate skillet, and heat up your tortillas.

Mix, add cheese (sharp cheddar) and done.
