Howdy, dear friend gave me a NICE large Flounder, it was my Grandfather's FAVORITE fish. How do or wha is the best way to do flounder fillets??? Never caught one, so am new to flounder (Your Delta Chi name is ... Flounder!).

My favorite way:
Scale it, score it, season it.
Butter and/or oil.
Broil it, separate meat from the bones, garnish with chopped parsley and fresh lemon juice, serve with a little more drawn/melted butter.

I like to fillet it open, and stuff with a mix of sauteed green onion, cup up shrimp, crab, crushed ritz crackers, and copious amounts of melted butter. Broil it, and consume mass quantities.

Lemon butter Picatta has been my favorite (non fried) preparation in fish by far.

If flounder was gutted and scaled the way you can stuff it , that's the way to go ! If it's filleted then I would do the Picatta recipe !
