It is Lent, need some help with what to make on Fridays, fish based.

Howdy, yes we are Catholics or as our neighbors say Cat-Licks. Live in Rockport so I should be a fish guy, but am not. Looking for some, hopefully, simple Friday Fish dishes. Whacagot??

Screw fish on lent, I've heard these beaver bomber sandwiches are a hit in the East Texas Parishes in lieu of Friday fish frys.

And yes, you can eat beaver on Fridays during lent since it is an aquatic animal.

One our family favorites is grilled or broiled Salmon (go to costco and then divide it and put in freezer ziplocs) and a side of orzo. Will look up exact orzo recipe when I get home but its basically package of orzo, 1/2 yellow onion, 1/4 cup chopped carrots, butter, chicken bouillon cube, some cavenders, some garlic powder. Cook onion & carrots w/ butter, then add bouillon, cavenders, garlic powder. Cook till onion is translucent. Cook orzo and then combine orzo and onion/carrot mixture. Side salad

My serious answer is a crispy skin salmon with whatever side you want.

Fill up a pan with 1/4in of olive oil and get it up to medium-high heat.
Take a piece of salmon with the skin on and dry it with a paper towel and season with salt and pepper.
Place skin side down in the oil for about 8min and flip to the other side for another 2-3 min.
Put on plate and serve.

This is the easiest and best tasting way to cook salmon that I have found. It's pretty much what I cook every Friday during lent if the Church isn't having a fish fry.

StockHorseAg: Thanks for suggestion! However, I do know for a FACT that Marsha (wife) has not, will not, will never eat Beaver, not just her, that includes me. Ain't happenin'! I will stop here, cuz further discussion just gets gross.

What's wrong with eating beaver?

I hadn't heard of someone being so against it, so I did a little googling, and it seems fine?

I remember a season on Alone when a couple of the contestants killed and ate beaver and then got really sick and ended up tapping out.

Fish tacos made with the mixed corn/flour tortilla's from HEB, feta cheese, baby spinach leaves, a squeeze of lime juice, and the Whataburger jalepeño/ranch sauce.

Lots of good suggestions so far - some of it depends on how much you want to honor the "spirit of the season"
(Our church has always done Meatless Meals on Fridays, and one year we decided to call them "Meager Meals" as that was more appropriate. We had meager attendance that year so we changed back after that).

So without regards to suffering or healthy eating:

Go with different themes, such as "breakfast for supper" (some have said eggs, or pancakes or waffles or French toast);
Pasta Night - lots of great meatless options there
Hispanic night - don't need meat to have a good meal there
Salad night - make a big honking healthy salad, just go with a meatless protein
There are good meatless soup options
How creative can you get with rice dishes?

We did pasta last week, having catfish this Friday as it is my FIL's birthday.

Take any mild white flakey fish fillets and place in casserole dish, cover with salsa (we prefer a sweet and savory style) and bake at 350 until done. Remove and top (liberally) with shredded Monterey Jack cheese and place back in oven until melted. Serve with any number of sides. Easy and healthy meal.

We like grilled veggie tacos - grill some zucchini, portobellos, green and/or red pepper, onion; add some pico and salsa and you're good to go.

EDIT - said you wanted fish dishes. So grill some fish - halibut, mahi mahi, red snapper all work - instead of the squash and portobello.

Pakistan Tawa fish is quickly becoming one of my favorite ways to cook speckled trout. I like to add a little cornstarch just prior to frying to get them extra crispy.

I make more marinade than needed and make a simple potato curry to serve with the fish. Dice some potatoes and onion and cook in oil until tender as if you were making Home fries. Add a couple of tablespoons of the curry marinade an a couple of tablespoons of tomato paste then fry a couple of more minutes until everything is coated. Add an half a can to a full can of coconut milk depending on how many potatoes you made. You want to keep this pretty thick so don't overdo it.. Yogurt or heavy cream would work as well if you don't want the flavor of coconut.
