Tibetan Inspired Lentil Soup
The country of Tibet has the highest average elevation in the world, with an average elevation of 14,000 feet which is a little more than 2 miles. It has the distinction of having the tallest mountain in the world as well. The height of Mount Everest is 29,032 feet which is 5 miles. Tibet is also considered the seat of the Buddhist Religion. This soup is earthy and exudes the subtle taste and smell of nature and brings warmth to the people living in a cold climate. I also enjoy putting lentils over a hot bed of rice.
Servings: Four to Six
Ingredients:
1 lbs. uncooked lentils.
10 cups water.
1 lbs. pork shoulder, diced into 1/2 inch cubes.
1 large potato, diced into 1/2 inch cubes.
1 onion, chopped.
2 carrots.
1/4 cup garlic powder.
2 jalapenos, deseeded and chopped.
2 1/2 tablespoons coriander.
2 tablespoons lemon juice.
2 Roma tomatoes, chopped.
1 green pepper, chopped.
1 1/2 tablespoons cumin or to taste.
Cayenne red pepper to taste.
1 tablespoon salt or to taste.
1/3 cup cilantro, finely chopped.
Instructions:
1. Wash the beans well.
2. Add all ingredients from lentils to salt.
3. Simmer for 20 to 30 minutes.
4. Stir occasionally.
5. Adjust the water to your liking.
6. Pour the soup into bowls and garnish the top with cilantro.
