Chuy's creamy jalapeño salsa. We buy a quart of their red salsa and creamy jalapeño every Christmas Eve and use it on the Tamales too. Legit

Not topped but tamales with black beans in the same dish is what I like. Let the get a bit of bean/juice on each tamale bite

I did the red chile sauce from the video above, with a few variations:

I didn't measure the dried chiles I collected a the Mexican grocery store, just grabbed a handful of 4 different kinds and went with it. So my "red chile sauce" was more of a chocolate color.

Variations:

I added a handful of cilantro to the blender and the squeeze of one small orange.

After blending, it was fantastic but HOT, so I stepped on it a bit with liquid butter (Wings N More technique for tempering heat). It mellowed out a bit, especially after straining out the stems and seeds.

Final product was fantastic on tamales Christmas Eve and will also look really good on some enchiladas or grilled chicken later.
