Staub Cocotte & Beef Bourguignon

A sweet friend gave me a Staub "cocotte", I guess that's French for "Dutch oven", for Christmas. This thing is a beast; I put 3.5 lbs of chuck in it today and it is only about 1/3 full!

I decided to try a Julia Child recipe to inaugurate it. I started cooking at about 2:30. This is supposed to cook for 3-4 hours once it's in the the oven. I just got it in the oven at 4! I guess you basically have to begin this right after lunch.

Anyone have good recipes for a large Dutch oven? I have my standby pot roasts but am hoping to branch out to get some good use of this very nice Dutch oven.

My Staub Dutch oven is the most useful and versatile piece of cookware I own. I'm sure people say the same about their Le Creuset.

Favorite thing I make in it…? Hard to say, but a proper bolognese is hard to beat.

Funny, I will be starting Julia Child's Boeuf Bourguignion in our 9-quart Staub tomorrow morning. Using tri-tip from Costco. Will let it roll all day in the oven before serving at about 7:30 after Mass.

We make as much as we can in the Staub (also have a couple other sizes). Soups, roasts, rice dishes, braised meats, etc.
