Howdy, I NOT really a Salmon fan, but my wife really likes it. I do it on the classic Cedar Plank (from HEB seafood counter) on a charcoal grill. My question is what is/are the best topping for said fish. Anything sweet and spicy? Anything y'all have that makes it taste better (good) is great. Thanks!

We do salmon at least once a week. We actually just buy the small portion trays from HEB and throw them in the oven.

My wife recently bought this and has been putting it on top. It's delicious!

Pretty big fan of this stuff. Not really sweet at all, but good flavor for salmon imo.

This is the rub I put on my wood smoked salmon before grilling. I don't remember where I saw it online, but it's amazing.

1/2 cup brown sugar
2 tablespoons olive oil
1 tablespoon dried Italian seasoning
1 teaspoon smoked paprika
1/2 teaspoon Kosher salt

Salt.

And flip it over after pan frying with skin on so the crispy skin is your topping.. hard to beat especially at the time of year the under skin fat is just right.

2 tbs apple jelly
2 tbs horseradish (or to taste)
1 tsp apple cider vinegar
Finely chopped chives

S&P to taste

Sprinkle salmon with 1/4 teaspoon salt and pepper. Heat oil in a large nonstick skillet over medium heat. Add salmon, and cook 3 minutes. Turn salmon over; brush with half of apple mixture. Bake at 350 for 5 minutes or until fish flakes easily when tested with a fork. Brush with remaining apple mixture.

That's a lot of horseradish. 2 tablespoons?

It's a riff on jezebel sauce. I think that it sounds great, I always loved the spicier jezebel sauce I've had.

We make this Asian salmon dish every other week. Serve over rice with cucumber, avocado, sesame seeds, nori, green onion.

Sauce:

2 tsp wasabi
2 tbl soy
2 tbl mirin
2 tbl rice wine
1 tsp sesame oil

I got this stupid simple glaze from a local at the airport in King Salmon AK.

Tsp butter
Tsp sriracha
Tsp honey

Combine and warm, brush on the last 5 minutes.

I typically like to prepare salmon pretty simply with just S&P and finished with lemon near the end of grilling. However, when topping it, I typically do a grilled salmon with avocado salsa. This is a hit with my family and anyone else I've served it to.

First, prepare a rub with the following. Apply olive oil to fish, then rub and let sit for 30 minutes prior to grilling. It has a pretty strong flavor, but the salsa in the next step helps to brighten it up and balance the flavors.
  • salt
  • chili powder
  • cumin
  • paprika
  • onion powder
  • black pepper

While waiting, prepare a "salsa" with the following. I like to just gently toss it so it stays chunky.
  • avocado (cut into small cubes)
  • diced red onion
  • lime juice
  • chopped fresh cilantro

Top the salmon with the salsa just prior to serving it.

Skin side down on foil, spread pesto on top, then panko. Wrap foil loosley and cook to 125 internal. Simple and delicious. We picked this up when living in AK and have been making it for 20 years.

This is the way!

We're also big fans of a simple chimichurri on top:

1/8 Red onion
4-6 Garlic cloves
1 Jalapeño or Serrano
Half parsley, half cilantro
~2-3 tbsp EVOO
Juice from 1 lemon
Lemon zest
Mexican style seasoning (I love hardcore carnivore Tex-Mex)

Finely dice all aromatics and combine all ingredients in a bowl/zip lock bag. Also works as an amazing marinade for grilled shrimp.

This is pretty easy and tastes great. You can finish the bacon and corn relish and it can sit while you grill the fish. Serve over a bed of baby spinach.

I've been cooking an apricot glazed salmon lately that the fam loves. I baste the salmon in olive oil and salt and pepper. Sear both sides (first the non skin side, then flip to skin on bottom in a very hot cast iron. Then coat (mix apricot, soy sauce, ginger, garlic) and stick skillet in an oven to finish off. I use a meat thermometer to pull it at the right consistently. Super easier to do and a great alternative for salmon.

Exacly like mine (see above) but with a little different glaze. Going to try this next as an alternative.

W have been cooking salmon in the air fryer using this glaze:

1/3 cup honey
1/4 cup soy sauce
4 garlic cloves, minced

Whisk above ingredients together in a small bowl. Sprinkle kosher salt and pepper directly on the meat, to taste.

Line air fryer basket with aluminum foil, preheat to 400 F. Cook salmon skin side up for 4-5 minutes. Flip it, coat meat with the glaze and cook another 4-5 minutes.

An avocado salsa like that is definitely our preferred way to jazz up salmon.

Another alternative is to make a pineapple or mango salsa with serranos and use that. A nice juicy sweet fruit paired with the fresh pop of the pepper and red onion.

Salmon Piccata

Don't have a recipe handy but its the same as you do a chicken piccata. Simple, Just google salmon Piccata. Salmon is my wife's favorite fish. I made salmon Piccata for her, and she went crazy over it. It's the bomb!

My brother in WA state has a great recipe I've done many times

Soak the cedar plank in water for about a half hour
Soak the fish in soy sauce
Place filet on the plank and cover with a generous amount of brown sugar

Place directly over the grill and close. The sugar will glaze over the filet ala creme brulee and the soaked plank with smolder and smoke but not burn and the smell is great. The plank will be destroyed and the blackened sugar will run off and blacken. If you want to avoid a mess, you can also put down foil to protect the grill.

It has a really good taste between the fish, saltiness of the soy, and sweetness of the sugar.

Ha! Same as I use. Good stuff. After purchasing my Weber kettle recently, I've been smoking our salmon using apple or pecan wood chunks. Sprinkle some of this good stuff on top, get the wood smoking ('bout 200-250*), place on grill (indirect heat) for about 30 minutes. Yum!
