Several years ago someone posted an old YouTube video on here of a guy trying to teach his viewers how to cut brisket and he's completely making a mess of it all. Really hilarious. Does anybody know which video I'm talking about and can link it??

There was even a poster several years back when this was originally posted that vouched for this method when they were slicing at the restaurant they worked at. That brisket in the video looks like a brisket cooked in KC or Memphis where they need to stick to ribs.

Aside from scraping off the fat cap with a knife, I think the next most cringeworthy part of that video is him referring to the point and the flat as the 'top plate' and the 'bottom plate'

Yep. I have made this comment here.

40 years ago as a college student I worked a put at Gabby's BBQ in Houston and Luther's here when it opened. Aside from this brisket being overcoocked to death this is how everyone trimmed a brisket.

You sloughed off the top fat cap and then separated the point from the flat by slicing between along the fat line. You kept a fat trim bucket beside you and scrapped all that fat into the bucket.

You sliced the flat for plates and finished trimming the rest of the fat off the point. 99.9% of that went into chopped sammys. No one wanted or ate the point and no one wanted fat on their plate.

Times were different.

Was it Lincoln Riley? I can remember his brisket post not going over well.

Holy crap that's hilarious. I wanted to punch my screen every time he said bottom and top "plate" when referring to the flat and point.

Someone needs to take the knife from this guy immediately before he does any more damage (to anything.....already proven to be unreliable and not of sound mind).
