1 lb ground chuck or ground pork
1 lb smoked brisket, chopped (the fattier and smokier the better)
1 ring of cooked beef sausage, sliced
2 tbsp vegetable oil
2 large white onions, chopped
6 cloves garlic, chopped
2 large tomatoes, chopped
1 x 10.5oz can of Rotel with green chiles (do not strain liquid)
1 x 14.5oz tomato sauce
1 tbsp cumin
1 tsp dried oregano
1 tsp coriander
1 tbsp chili powder
1 square of semi-sweet baker's chocolate
Optional topping ingredients:
- diced fresh jalapenos
- chopped onions
- shredded cheese
- hot sauce

Add 1 tbsp of oil to skillet and heat to medium/high
Brown chuck or pork, drain fat, set aside
Add other 1 tbsp of oil to skillet and heat to low/medium
Add onions and garlic
Cook until they sweat
Add tomotoes, can of Rotel, and can of tomato sauce
Increase heat to high until bubbling
Add chuck or pork, brisket, and all seasonings
Maintain heat until bubbling then cover and simmer for 30 minutes
- the chili will be very thick at first, but will liquify
Add chocolate and sausage
Cover and simmer for 20 minutes

If the chili needs flavor, add more cumin and chili powder in equal amounts
- do not add more coriander or oregano
- do not add more chocolate

Top with optional ingredients

Serve with some damn good cornbread and cold Lone Star Beer!

Love this recipe. I've started smoking a couple point ends at a time, not eating brisket, just making chili.


Smoked Brisket Chili
3 pounds smoked brisket, chopped and chunked
2 tsp ground Chipotle Powder
1 large can crushed tomatoes 28 oz can
2 small cans tomato paste (Basil and Garlic)
1 medium onion, chopped
2 tablespoons chopped garlic
2 bottles Shiner Bock beer
1/2 cup Worcestershire sauce
1/2 cup Louisiana Hot Sauce

Spices:
1 teaspoon black coarse-ground pepper
2 tablespoons cumin
teaspoon ginger
1 tablespoon salt
3 tablespoons chili powder
1 tablespoon paprika
1 tablespoon dry mustard
1 teaspoon oregano
Olive oil

Combine all ingredients except spices, onion and garlic. Simmer in a large cast iron pot for two hours.
In a separate pan, saut onions and garlic in olive oil. Add spices to the sauted onion and garlic, then mix with chili. Simmer 30 minutes, add more beer if needed.
