I made this for the Super Bowl and it was devoured in 10 minutes. I probably should have doubled it.
2# crawfish tails
1 package cream cheese
1/2 stick butter
1 diced yellow onion
1 diced green pepper
~4 diced celery stalks
1 can diced green chilis
~ 1/3 cup salsa cremosa or verde
1-2 tbs creole seasoning
Parmesan cheese
French baguette, sliced ~1/4"

- Warm the cream cheese in a small non-stick pan
- Melt half stick of butter in cast iron pan, add the onion, green pepper and celery, cook down really well (about 20 minutes)
- Add the crawfish, green chilis and salsa cremosa, cook for ~5 minutes
- Add the cream cheese & creole seasoning, mix well and cook for ~5 minutes
- Add parmesan cheese to the top and place in a 350 oven, cook for ~10 minutes
- Lay sliced baguette pieces on a baking sheet, drizzle with olive oil & a little garlic powder, bake on a different rack inside the 350 oven until baguettes just start to turn golden brown
- Dip the baked baguettes into the dip or spoon the dip over a baguette and enjoy!
