I have a Baratza Encore and I wanted to look into doing some bulk drip brewing. What is a good grind setting?

Also, what is the ration for water to beans?

While it may not be the "preferred" ratio, I typically do 56 grams of beans for a 12 cup brewer, although I have a scoop that's roughly 7 g, I do 8 of those. And I typically grind at 17 on the encore. But again, that's just me.
