How do you cook your homemade French fries

1. The way most people do - slice potatoes, throw in 350 degree shortening/oil until brown
2. Slice, soak in ice water for a few hours, twice fry
3. Slice place in room temp oil, heat until fries are brown (just read this one)

Peel potatoes and slice into a water bath. Soak for a few hrs. Remove and dry thoroughly. Fry at 300 until soft. Spread out on a baking sheet to cool. Fry a second time at 350 until golden.

Notes:
My fries are significantly better when I'm doing it for a crowd and can bust out the 4gal Cajun fryer because the oil holds temp much better.

A dedicated fry cutter is worth the investment

Yeah. I'm considering purchasing a Fry cutter. Loaded fries with Brussels, bacon, guac and cheese (with fried egg on top) is one of my all time favorites!

Cut sweet potatoes, soak in avocado oil for a few minutes, bake at 350 for ~18 minutes, finish on the skillet while burgers are resting/buns are toasting

I tried to follow these directions and ended up with a kitchen fire and somehow the worst shoe string fries ever.
