What's your go to Friday meal during Lent?

Looking for creative, no-meat dishes to serve the family. My Parish is not having a fish fry due to the weather, and my local grocery stores have been hit pretty hard. All ideas are welcome! Thanks

Cheese enchiladas? Plenty of enchiladas sauce recipes with no meat

What we called chalupas growing up, probably more commonly known as tostadas (corn tortillas fried flat or buy them at the store already made, spread refried beans, top with lettuce, tomato and cheese

A version of this served every so often growing up. I aways chuckled when they called it "eh-spagetee",



Also tamales de queso con rajas, so cheese and roasted pepper slivers, I will admit, I love these!!! They also made bean tamales or tamales de frijol

As you can probably guess, I'm hispanic so thus the latin skew in my suggestions

I chuckled, if you are familiar with the mexican bingo game called loteria, el borracho, la dama, el catrin.... we used to call that bingo la chalupa, haha. That game and this spinny thing called "toma todo" were very popular growing up!! Some serious money exchanging hands at family get together

I don't like seafood, so meatless mexican and italian dishes are always my go-to during Lent.

Grill cheese is also a staple.

Potato, onion and chickpea coconut curry over rice. Super filling, blast of flavor and pretty simple one skillet meal.

We like massaman curry with the peanut butter but yellow curry is good too. Spice it up if you like or make it mild. It's always a pleaser and makes the house smell amazing. This is the paste we buy.

I was just brainstorming some ideas yesterday, trying to think of meatless meals I can cook without having to go to the grocery store any time soon. What I have on my list:

- Tomato soup
- Shakshuka with Chickpeas & Pita Bread (link to Epicurious recipe we like)
- Curried Red Lentil Soup with Coconut Milk (link to Bon Appetit recipe)
- Minestrone
- Chilaquiles
- Corn Chowder with Green Chiles

Vernada, don't feel bad you reminded me of a story a priest told us when I lived in Elkridge, MD. We use to go a church in Elkridge called St. Augustine, and at the time Father Jerry was the priest there. It was the start of lenten season and he had a busy, busy day, he was exhausted and on the way back to the parish, he stopped at McDonalds to grab a bite to eat, he said he was so tired it didn't even cross his mind and that folks from the community were giving him funny looks as he was chowing down on his Big Mac and fries dressed in his priest attire, haha.

With the weather events in TX I think we are fine if we have meat while we get back to normal.

I will get ridiculed for this but I enjoyed hitting up Long John Silver on Friday's during Lent, totally unhealthy I get it but it was just a thing for me. I liked the little crunchy batter drippings they included with your order. I can't find one here in the Houston area. I'm in Cypress and the nearest one I think is in Katy.

LJS at least once during Lent is a household tradition.

Eating richly fried fish and fries does kinda seem to defeat the penitential purpose of the season...

...at least until about 8 hours later when your GI tract does the penance for you.

Growing up Lented Fridays only meant LJS or Catfish King. Maybe the KC fish fry. As a (very) lapsed Catholic, today's menu looks to be sausage breakfast tacos, leftover tacos for lunch and probably veal tortelacci for dinner.

Fried fish is our normal go-to, but, we eat a lot of vegetarian/vegan meals anyway so Lenten Fridays are pretty easy from a food perspective. Also, it's a good reminder that the Fast is part of Lent as well as meatless so we eat pretty simple for breakfast and lunch especially. Oatmeal, PB&J, and such. We had a Priest comment that if you're eating meatless breakfast tacos, cheese pizza for lunch, and the Fisherman's platter for dinner that you're missing the point entirely.

Outside of fried fish, my Kids favorite is my Zucchini Fritter Parmesan or Hibachi Shrimp and Fried Rice
Cheese Lasagna, Stuffed Manicotti, or Stuffed Shells are always a big hit
I could live off of Pasta Puttanesca.
Pretty much anything on a Chinese menu with Tofu subbed
My favorite Asian dish is Pad See Ew with Tofu

Last night I made a three cheese baked pasta with toasted garlic bread. Cheese enchiladas are a good one. I always do blackened catfish over a bed of dirty rice topped with a Ponchartrain sauce. I make a stir fry at least once a week, so I will probably do one with shrimp. Although this is more of a summer dish, my wife loves caprese so I will either make a caprese based sandwich or use that as an appetizer/side for a simple pasta dish.

I didn't grow up Catholic, so I don't have any sentimental memories or recipes around Lent, but my grandparents grew up poor in Texas and beans and cornbread were a staple meal of theirs. I suppose that would be a good one on a cold, Lenten Friday.

This is why I don't get this tradition. I'd probably prefer grilled haddock tacos over most beef dishes (aside from a steak or good bbq). I certainly wouldn't consider it a sacrifice.

As a life-long, devout Catholic and former seminarian.... I am right there with you. I'd rather have sushi or ahi-nachos or grilled shrimp tacos or a dozen other seafood dishes than even a high end steak. Its really not a sacrifice.

But it's still what we do.

Nothing wrong with that and everything right. Hispanic food is among the best there is.

Our go to quick meal for lent is three cheese tortellini with either a tomato based pasta sauce or pesto.

On thing I can't believe I overlooked in this thread is "Capirotada". Lent meals, and I am not Catholic, are probably some of my favorite Mexican dishes made.
