I bought one of these a few weeks ago at Sam's Club because last year they sold out everywhere. Anyway, the turkey is fully cooked and smoked and wrapped in a vacuum type bag, but the label said "refrigerate or freeze by Dec. 5." That seems like a long time for a piece of meat to last in the fridge. So I called Sam's Club to confirm and they said it will be fine after weeks in the fridge. Does this sound right?

I would have smoked a turkey myself but I'm doing a brisket so not enough room on my cook surface.

If it's fully cooked and vacuum sealed, and the vacuum seal is maintaining the vacuum, then refrigerating it till December 5 should be fine.

Depends on whether it is cured or not
