As a white kid that grew up in the 210 I had a ton of my friends Abuelas tres leches. I never appreciated how good were until tried to make my own.

So far I'm planning on making a chocolate cake. I'm not sure what frosting yet. I'm also going to do a chocolate chip cake with passionfruit curd because i already have all of the stuff for that one.

my favorites are white wedding/bride's cake, angel food, chocolate, and carrot.

I usually make an ermine frosting rather than American butter cream, except for the carrot which of course requires cream cheese.

We don't like cream cheese. I do Swiss meringue buttercream a lot.

I'm also not a cream cheese fan. It just overwhelms the flavor of any cake to me, that's all I taste. Big fan of Italian buttercream when I want to put in the time to do it. The first time I made that it was mind blowing.

I have found that I like Austrian cakes.

Start with a Sacher Torte, and then just bake the rest of them. I cooked a version with a cherry ganache that is my favorite. It is what Dr. Atkins is eating right now.

Odd to me that Red Velvet hasn't been mentioned. I thought it would be #1. And not to derail, but the Blue Bell Red Velvet that came in 5 gallon containers and only sold by the scoop at the old Charlie's Grocery in Northgate is likely the best sweet stuff I've had in my life.
