Has anyone tried this? My wife is going to try some topo Chico muffins tomorrow. We have an egg allergic son so this could make breakfast way easier

Haven't tried it, but my son was allergic to eggs and we always used a 1/4 cup unsweetened applesauce for the eggs.

Yep this. My youngest is allergic and I substitute apple sauce all the time and works perfectly. Muffins, pancakes, cookies, etc.

If you plan on keeping the kid long term, make a batch of this:

1.5 C arrowroot powder
1Tbls baking powder
1Tbls Xanthan Gum

Keep on hand and mix 1 Tbls powder and 3 Tbls water for baked goods, pancakes, etc

Yikes! Forgot to divide from the original recipe which makes way too much

The point of that article was to say that- according to this reviewer, making muffins- that carbonated water performed better than applesauce, arrowroot (although it used arrowroot without baking powder) and Aquafaba (gross imo).

I was surprised. I personally like applesauce muffins. We plan on doing some experimenting this weekend with different baked goods

Xantham gum is magical.

It's in the baking aisle by the way, no with the rest of the gums at checkout.
