How long do you want to ignore this user?
I did a search and didn't see anything come up other than a random post here and there.

Does anyone have a carbon steel pan? Thoughts? Our cheap nonstick is on it's last leg and I was thinking of replacing it with one of these. Also seems it could take high enough heat to sear. I do have a cast iron and we use it almost daily so not sure if this would be a complimentary pan or unnecessary duplicate....

While the second link looks awesome, I wouldn't pay that for one. It's Alton Brown's favorite pan, though, and him posting about it is what got me to start researching so posting it anyways.

I bought a Made In carbon steel pan about a month ago and really like it. It took a little while to get the seasoning to a point that I was happy with but now it is very slick.

Carbon steel pans are great. I have several from De Buyer in my kitchen, however there is very little overlap in foods I would cook and carbon steel and foods that I would cook and nonstick. They serve two completely different purposes and one won't replace the other. I recommend you get some inexpensive nonstick pans from a restaurant supply as well as the carbon pans and think of nonstick as disposable going forward.

Can you expand what you would use the carbon over the cast iron and vice versus. The carbon heats quicker?

I got one and it was way too big to store and way too heavy. I also got an outdoor griddle so it really wouldn't have been used


If in Houston I'm selling it for super cheap. Never used.

Carbon steel is the pinnacle of cooking in my mind. I have 7-8 pieces along with a full set of calphalon premier.

Requires more care but is fantastic at damn near everything.

I don't own a non-stick. Keep you equipment in good order and use good technique and all good pans are non-stick.

This shows as $60+... unless you really meant Carbom - maybe that's' cheaper than carbon.
