Having tamales and making chili gravy for them. Fido I believe had a recipe. I can't find it on the site any help for an Old Ag? TIA. Or give me hear you recipe for chili gravy.

Since the OP got addressed I'll post another suggestion. Green Chile sauce is actually my preference for Tamales

2 Tbs vegetable oil or olive oil
1/4 to 1/2 small onion, diced
1 large garlic clove, minced
2 Tbs flour
1/4 tsp ground cumin
1/4 tsp black pepper
1 1/2 cups chicken or pork broth
1 cup roasted, peeled green chiles (10-12 fresh New Mexico, Anaheim or California or poblano chiles), or (if you don't have fresh chiles) 8 oz canned green chiles.
1/4 tsp oregano
1/2 tsp salt
(optional: 2 tsp or more chopped, canned or fresh jalapenos if you want
it hotter)

Cook it in a sauce pan then blend until smooth

Ground beef cooked down.
Put in half a tube of chorizo.
chopped onions and garlic
Add either tomato sauce or paste
Plenty of chili powder or make your own chili sauce from dried chilis
cumin, paprika, cayenne, salt to taste
Use chicken stock as extra liquid
At the end, mix up some masa and water for paste, add a little at a time to thicken


All about making the taste like you like it.

seems like it might be OK, but usually recipes have actual measurements and not just "as much onions, garlic, comino, paprika and salt as you want"
