I like nachos and I like seafood but I have never experimented with the combo. Anyone got any tips on starting off on the right foot? Type of fish, chip, topping...

I'd stick with shrimp or possibly scallops or crab.
Use plain Jack cheese and not cheddar
Lightly saute the shrimp in butter and garlic until just under done
Take a tostada shell and smear with restaurant bought refried beans. Sprinkle a little pico on top and smother with Jack. Place a shrimp at north, south, east, and west. Pop under a broiler until Cheese is melted and bubbly. Cut into 4 nachos. Serve with sour cream and guacamole
Sounds like a tostada...which it is.MichaelJ said:FIDO*98* said:

While this sounds delicious it almost sounds more like an open faced quesadilla than a nacho
Really miss BWD at Northgate and their Nemo Nachos. I thought the tuna was raw but can't remember. Also had diced cucumbers, avocado and green onions.bushytailed said:
When Black Water Draw has its Northgate location they had Nemo Nachos on the menu. Fried wontons for the chips, seared ahi tuna, a wasabi drizzle, and some other tasty things that I can't remember right now. Good stuff.

Maybe you're new here or maybe you're re-tarded or something, but, if you've ever order nachos at a Mexican restaurant this is how they are made. Unless they are stacked nachos which means you're eating at a shiddy chain restaurant
So every bite you take of a tostada is a nacho.Bruce Almighty said:
Wouldn't a tostada cut up into smaller pieces be nachos?

So is saying a cut up tostada becomes nachos. Next you'll say if you slice a burrito lengthwise you have tacos.Bruce Almighty said:Old RV Ag said:So every bite you take of a tostada is a nacho.Bruce Almighty said:

No, that's just stupid.

So let me get this straight. I take a corn tortilla, cut it up into triangles, fry them and top them. I take another corn tortilla, fry it, top it, then cut it. Side by side, both look 100% identical, but only one is a nacho? If you can't tell the difference, they're both nachos.
They get their beans out of a bigger can than you do at home. Makes all the difference in the world! Now, homemade refried beans with lard are even better.expresswrittenconsent said:
"Restraunt bought refried beans" seems like a strange part of a recipe.

HEB has refried beans in a resealable bag near their marinated meats. Only ingredients: beans, lard, salt
They are great if you heat them up in a skillet.
