How long do you want to ignore this user?
Anyone know where in Houston I can find pork shanks? I've tried HEB, B&W Meats, Super H Mart, and a couple neighborhood Mexican meat markets and nothing. Even called Central Market and nothing.

After striking out I thought I'd just use hocks but these places don't even carry fresh hocks. Everything I've seen is smoked hocks. I need fresh.

Also why are these so hard to find?

Most people don't eat them because they're difficult to cook well. Most places just cut the meat off the bone and add it to the sausage pile for the grinder

Thanks. I'm gonna check out 99 Ranch Market. It was stupid packed yesterday and I couldn't find a parking spot.

I did check out a small neighborhood Asian market. One that I would typically be hesitant to buy meat from. They had whole pork legs from the hoof to the hock, but he refused to cut butcher the shank out for me. Said he only sells them whole.

Sure enough 99 Ranch Market (I-10 and Blalock) has them.

Thanks for the follow up tip. I don't even remember the recipe I was looking at, but now I want to go look it up.

Sous vide sweet and sour pork shanks

Cook them in the sous vide with a brine liquid for 24 hours then broil them to crisped up. Use the leftover liquid as a base for the sweet and sour sauce.

We shall see later this week.
