dressing salad ahead of time

I'm making a "leafless salad" for meals this week. Peppers, carrots, beets, and cucumbers. I like to throw some olive oil and balsamic on there. Is there any reason I can't go ahead and dress it ahead of time? I wouldn't do it if I had greens in there, but I wondered if these other veggies would hold up without getting soggy.

Would make soggy. Maybe put your dressings in plastic bags for easy pour? Idk.

Put the oil and vinegar in a small mason jar and shake to combine before serving. Don't refrigerate the jar or the oil will set up. You could do this with straight oil and vinegar, a homemade vinegarette, or take the spices and emulsifier separate to keep dry and cold, respectively (I use Dijon mustard in mine).

Definitely don't pre-dress.
