Sardines can be sustainable, but the Monterey Bay aquarium's
seafood watch only rates the Pacific ones as a best choice, and their score is not as good as other seafood. The Mediterranean ones are rated "avoid". And:

I'd guess that one of the most sustainable seafoods is farmed mussels.
