I need help with my attempt at homemade pimento cheese

Sorry if I am too brief. It is 1:11 am in the morning in Vietnam.

I made some pimento cheese straight from a recipe from Pinterest. The end result is the pimento cheese seems heavy on the cream cheese. It is not very creamy like in a store bought version. To get the creamy texture should I just slowly keep adding mayonnaise. ? Or should keep adding a ratio of mayonnaise to cheddar cheese to the pimento cheese to get it closer to what I think it should taste like.

Thoughts? I would love to have a option to eat a different. Sandwhich.

Perhaps looking at a variety of recipes will help you develop a strategy that couples with your resources.

The recipe from Noble Sandwich Co. is pretty damn solid.

Yeah, not knowing the proportions you used, mayonnaise may help make it a little more creamy. Perhaps if you added some more softened cream cheese that would help too. I just made a variation of Pioneer Woman's recipe for my first attempt, but I had to add more mayonnaise to get rid of the overwhelming mustard taste.

Look up the recipe for Jen Hatmaker's pimento cheese. Amazing stuff, especially if you make grilled cheese sandwiches with good bread in a panini maker or a George Foreman grill. Great stuff.

She uses candied jalapeos and it really makes it amazing.

I did this one over the weekend... turned out pretty tasty...

6 oz smoked gouda, shredded
6 oz smoked cheddar, shredded
8 oz room temperature cream cheese
4 oz mayonaise
2 oz chopped green onions, greens only
2 oz jarred pimentos
1 oz hatch green chiles, chopped
1/8 t smoked paprika
S&P to taste
