So have about 1 1/2 pounds of turkey leftover from Thanksgiving that I froze. What's your go to left over turkey recipe?

I had two Greenberg carcasses I used to make stock this past weekend and will be using stock in Mardi Gras gumbo in a couple of weeks. If you just have meat, smoked turkey might go well with mole and make up some enchiladas.

Tried their split pea soup and turkey recipe (on website) with our leftovers this past year - it was very good.

I was going to make a soup, but then decided on pot pies. However I wimped out and just made some sliders. Damn good though!
