If you were going to pick a sipping tequila for someone that likes to drink after-dinner, what would you pick? $20-$40.

Siete leguas or siempre azul. Get the blanco.
These are supposedly more handmade and traditional without cheap filler like most of the tequilas out there.

Casa Amigas or even Hussong's if you're willing to spend a few dollars more after tax. The Casa Amigas is decent at $30.

I recommend either a Blanco or a Reposado for most people, but I'm typically an anejo drinker.

I think you mean Casamigos. That would be my suggestions as well.

Casamigos Reposado is good and Anejo is freaking fantastic. Favorite sipping tequila and not outrageously priced

I'm a big fan of Espolon at that price point. It's a bit spicier (spice not burn) than some others so may be a change of pace for them too.

Further thought. Try hacienda de chihuahua sotol. Sotol is a cousin of tequila and this stuff actually sips quite nicely.

Cazadores anejo

You want to buy a reposado or anejo as they are preferred for sipping. You will have a hard time finding an anejo at that price point, so stay with the reposados. I really like Partida, Chinaco, Republic Tequila, and Pepe Zevada Tequila.

The sotol rec is cool because I haven't seen anyone mention it before. I drink Hacienda De Chihuahua Sotol Anejo and it is superb. Different than tequila, but I love it because it tastes great and easy to drink.

Not a connoisseur by any stretch, but I've really enjoyed 3 Caballos. Found it at Costco.
