Pork butt in oven?

Cochinita Pibil might be my favorite recipe for pork butt.

That Al'diavolo shoulder looks great in the picture. I always smoke mine on the pit for pulled pork, but I think I may try this over the holidays. Thanks for sharing.

I wasn't exoecting it to get to a good color in the oven, but with all those spices in it, it came out quite nice.

Cut deep slits in pork butt. Fill slits with slice of garlic and S&P. Salt and pepper outside. Put butt in oven bag and add sliced onion rings (seperated) on top of butt. Cook according to oven bag directions. Cook this every New Years Day. Probably my favorite meal of the year.

If you can't smoke it, I would suggest cooking in a crock pot/slow cooker instead of the oven. May not make a huge difference, but in general, it should retain moisture a lot more than in the oven.

Other than convience, how is a slow cooker any better than an oven?

If you're going to shred it, the crock pot is fine. If you want something you can slice, slow roast it in the oven. There's enough I terms fat and gelatin in pork butt that you will overcook it only by completelt forgetting about it. Plus, you get crunchy crispy bits on the outside that you can't get with a slow cooker.

All good points. I was assuming pulled pork, and did not think about sliced.

The Rick Bayless recipe is awesome. Last year for the LSU watch party at the house, I smoked the butt for about two hours since it was extremely cold outside, then finished it off in the oven.
