Looking for a recipe similar to Austin's BBQ in Eagle Lake or Mikeska's in El Campo. Anyone got one?

3c hot cooked long grain rice (HINT:mix all ingredients below then make sure Rice is really freshly made and warm when combining (suggesting doing it last) all ingredients so it absorbs all flavors

1/4c. French dressing
1tsp.salt/ 1/2tsp.pepper/fresh ground
**Important to get all below close to size of rice
1 c. chopped (fine) celery
1/3c. chopped fine yellow onion
1/3c. chopped(fine) green pepper
1/3c. sweet relish
1/2c. chopped (fine) sour pickles
1/2c. chopped pimento
3hard cooked eggs chopped fine
3/4c. mayonnaise
Combine all ingredients toss together then add to warm rice and toss lightly with fork. Refrigerate thouroughly for at least overnight (better 24 hours, keeps well in sealed jars. Great with picnics, Bar-b-q's, steak dinners to lighten the meal excellent side dish. Or straight out of the Jar like me..



I'll try this one out and see if it compares to what I had yesterday. However, I'm pretty sure what I had yesterday didn't have celery, and it definitely didn't have eggs.

The whole "make it like you do potato salad" is weird, cuz everyone makes potato salad differently. Hell, I don't think I've even made it the same way twice.

You're not going to like this but make it just like you make your potato salad only use rice instead. Make sure the rice is cool because it will mush up if still hot.

I make this one

3 cups of chilled rice
1 finely diced granny smith apple (you can leave the peel on if you like that texture)
1 finely chopped cucumber
3 sliced spring onions
1 handful of chopped parsley

Mix all of them together in a bowl

Now for the dressing

1/3 cup of olive oil or walnut oil
1/3 cup of white wine vinegar
2 tsps of curry powder
1 chopped garlic clove

Mix all that together in a small jar and pour over the salad to coat it. Cover and serve chilled.
