Hearty Beef Stew recipe

I am trying to find a good hearty beef stew recipe. I have been craving a nice beef stew and I am not happy with any of my current findings.

Anyone have one that they could share?

Here's my non-exact recipe. I often as Worcestershire sauce, tomato paste/stewed tomatoes, etc. for whatever mood I'm in.

2# beef, cubed
carrots, celery, onion, rough chop
minced garlic to taste
couple of bay leaves
spring of fresh thyme
salt to taste

Season beef with salt & pepper, brown in a skillet. Don't overload the skillet, brown the meat in batches if necessary. Deglaze the skillet with about a cup of red wine & the garlic.

Once the skillet is deglazed, add the wine mixture, bay leaves & thyme to the stock pot. Add enough water to generously cover the meat. Simmer for about an hour. Add vegetables & simmer until they are tender. Adjust salt/pepper/etc. as needed. Mix about 2Tbs corn starch with cold water and add slowly to stew until desired consistency is reached.

I don't really use a recipe... brown stew meat, add to crock pot. Add onions, carrots, peas, cubed potatoes, packet of french onion soup mix, minced garlic, paprika, a bay leaf, and cover with beer and beef broth. Cook until potatoes and carrots are done, adding more liquid if needed. I personally add the peas last, a few minutes before serving, because I like them "poppier" and not soggy.

edit: I sprinkle with fresh parsley at serving.

don't have a recipe but I brown cubed short rib meat, remove them from heat. add diced celery, onions and green peppers and cook until soft. add can of tomato paste and a quarter tube of anchovy paste. stir. add beef and chicken stock. add bay leaf, thyme, salt, pepper, cut carrots, mushrooms, and pork belly. add bottle of a good Cabernet.

cover and place in oven for a few hours.

I have been searching for a good beef stew recipe and this is all I can find on the Foo & Spirits forum. Does anyone else have a good recipe?
