Too bad New Years is in the winter. Also too bad black eyed peas, purple hulls and crowder peas are not widely available in Oregon.

So, I'm doomed to mediocre dried or canned peas. Yup, open can, heat & eat.

Cook 'em like borracho beans, with pork, onions, garlic, chiles, cumin, tomatoes and beer. Serve with diced onions and cilantro.

I'm in Oregon too. I think I'm going to go with dried. I'll probably put a ham hock in it and jalapenos, but I can never get that sort of creamy texture.

I hate them.

I open a can, heat it, put the number of beans equal to my years on a plate, cover with Heinz 57 sauce and eat while washing down the two spoonfuls with a Coke Zero.

Spartan, instead of getting a smoked ham hock, find a fresh ham bone.

Take 2 quarts of chicken stock and put it in a stock pot with the ham bone. Simmer for 2 hours or so.

Render some diced bacon until just under crisp. Sautee a diced chopped onion with bacon until tender. Add a few cloves of diced garlic for a few more seconds then add a pound of fresh peas, the stock, bone and all, and a few leaves of chopped mustard greens. Season with salt amd pepper. Simmer about 45minutes to an hour. Adjust salt if necessary.

Since you are using dried peas go ahead and cook them with the ham bone and stock.

not a holiday suggestion but I've used them in hummus and then with traditional cooking methods but with Indian spices. hard to beat them with collards and corn bread though.

I heated up a can of black eyed peas with jalapeños and added soft cooked bacon and diced onion and two tsp sugar. I hate them and these were decent.

I saute diced bacon in my dutch oven, then add chopped onion, jalapeno and saute for a bit before adding frozen peas, water and simmering until tender. Don't drain the bacon grease. Probably horrible for you, but delicious.

I use pretty much the same recipe as Fido. Never added mustard greens though. Really like that idea.

Here's the winner. Even had this in the Cotton Bowl parking lot back in the day.

Creole Blackeye Peas

1 medium onion, chopped
1 small bell pepper, chopped
2 cans or 2 pt pkgs of blackeye peas
2 TBS butter
1 8 oz. can of tomato sauce
2 TBS chopped parsley
1 Bay leaf
2 cubes of chicken bouillon
1/2 tsp celery seed
salt and pepper

Saute onions and pepper in butter. Add remaining ingredients and simmer covered for 20 minutes.

Add 1 can Rotel tomatoes, 1 cup cooked rice, and 1 pound of sliced Meyer's sausage.

Simmer 15 minutes.

I made a pot to rave reviews today. You just have to have the courage to make them terribly unhealthy.

Soaked dried beans for 6 hours.

Rinsed and added water to cover. Add 1 tbsp salt, 1 tbsp tony's, 1 onion chopped, 6 slices of bacon cut up, garlic powder, and 1/3 bunch of cilantro. Bring to boil and cook at a soft boil for 20 min. Then let simmer for 40 min to an hour.

Enjoy the good luck for 2013. I figure we are going to need it for a year ending in '13

Diced green chilis
Stick of butter
Half a block of velvetta

put in crock pot on low. Yummy
