The ever elusive Spanish rice dish:
First of all, I did not the use the proper sized "paella" cooking dish( large and thin, about 13-15" wide). I had to settle with a cast iron skillet.
Secondly, MIL, lent a hand. She went grocery shopping and "mis-purchased" some items, namely, baby clams, instead of mussels.
And finally, Im gonna say, this is the pinnacle of my culinary attempts. I am ready to move on to more complicated dishes...time will tell.

Luckily, there was a good amount of juice left in the sealed package that I used as broth.

In a separate pan, got the onions, garlic, peppers and tomato "sofrito" simmering.

Important to cook moisture out of tomatoes(pre drained)

Clam juice broth, dry wine, parsley simmering in the Viking.

Special rice. Note: we used 1 1/2 cups of rice. Hindsite called for 2 cups...
