I'm looking for some variation recipes.

I've done the normal buffalo wing recipe

Anybody have any personal concoctions that they wish to share??

This is one food where I can't even come close to a restaurant.

If I want wings, I'm not cooking them.

Wings are one of the easiest thing you can make far superior to any restaurant.

For the wings I get as dry as possible with paper towels and then immediately before frying lightly dust with 50/50 cornstarch and rice flour. Fry at 350 until crisp.

For thr sauce i melt a stick of real butter with 3-4 crushed garlic cloves and a habanero cut in half. Strain into a cup of Frank's Red Hot and whisk until thouroughly blended.

Toss freshly fried wings with enough sauce to coat.

Sometimes I will smoke wings for 30 mins ahead of time and then i add 1/2 cup of Sweet Baby Rays to the sauce.

ALWAYS serve with homemade blue cheese

Take your normal recipe and use cholula instead of normal sauce.

Here is the non-fry recipe that I use all the time, works great:

It's best to start with perfectly cooked wings

Then either use the sauce as described in the link, or my personal favorite, Keg sauce.

~ 1 cup mayonaise
~ 1/4 cup sour cream
~ 1/4 cup franks ( or to taste )
~ 1tsp rice wine vinegar

Mix well, toss with wings to coat.

Do you smoke then let cool or go straight from smoker to dusting to hot oil?

Preferably smoke, cool, dust fry. You still get good results going straight from the smoker to the fryer, but, the sauce doesn't seem th adhere as well

It was really the homemade part I was trying to drive home. Ranch, Blue Cheese, Buttermilk, whatevs. Just don't pour it from a bottle

Variation - grill or smoke (or both) them whole

Rub them with salt and pepper

Brush on a sauce after they have cooked a while.

Jerk:

Basic ingredients for my jerk sauce:

All Spice
Soy Sauce
Scotch Bonnet Peppers
Garlic
Brown Sugar
Scallions


Asian:

Soy
Rice Wine Vinegar
Ginger
Sriacha
Hoison
Garlic
Five Spice
Dark Sesame Oil
