Decided to experiment with standard polenta last night. Turned out pretty tasty, didn't think to take a pic though.

5 tbls butter
1 onion, chopped
3 cloves garlic, minced
7.5 cups chicken broth
.5 cups Franks Hot Sauce
1.5 lbs cooked chicken breast, cubed
2 cups stone ground corn meal
salt and pepper
blue cheese crumbles

Melt butter in large oven proof pot on stove, add onions, season and cook until soft. Add garlic, cook another minute. Add chicken broth and hot sauce, bring to boil. Slowly whisk in corn meal. Once thoroughly mixed, grind some more pepper and stir in chicken. Move to oven and bake for 45 minutes, stirring every 10-15. Serve with blue cheese crumbles on top.
