Anyone have a good chimichurri recipe?

Found this online somewhere:


Chimichurri Sauce for Steaks

Ingredients
1 bunch fresh parsley, chopped
8 cloves garlic, minced
3/4 cup olive oil
1/4 cup sherry wine vinegar
3 tablespoons lemon juice
1 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon ground cayenne pepper

Directions
In a blender or food processor, combine the parsley, garlic, oil, vinegar, lemon juice, salt, ground black pepper and cayenne pepper. Mix well, but do not puree.


NOTE: I do not add olive oil until after I have processed all other ingredients. I take the mix out of the food processor and put it in the serving dish and then add the olive oil.

That looks really similar to the recipe I use.

that recipe is pretty closet to mine

my changes are:

50/50 Flat leaf Parsley and Cilantro
Lose the cayenne and add some fine minced Jalapeno
Lime instead of Lemon


Then I chop everything my hand, takes some time but I like the rustic look, instead of the puree. Especially on a good grilled steak!!!!!! It will last longer too!

Be sure to let this sit for a couple of hours before you use to allow the stuff to meld!

homemade chimichurri is so freaking good - I made some up with a very similar recipe and then added parsley or oil to get the consistency I wanted.
