Open cell vs Rockwool insulation

Building a new house in Houston and definitely going w closed cell in the crawl space. Trying to determine any issues w Open Cell for the exterior walls and roof ceilings in the attic. Basically making the house an igloo w tempered air in attic.

Only concern is roof leaks and identification w an open cell insulation. Installing a standing seam metal roof so leaks should be less if any if the roof in installed correctly

Anyone done an analysis on this open cell? Seen YouTube videos which are helpful already

Concerns of leaks, fire, costs, off-gasing?
Rockwool
that still works hard in houses circa 1980 and beyond.
