We're on a well. Water has pretty high iron/copper content. When we've lost power and run the heater and pressure tank dry, we usually notice it once the power comes back on and the tank refills and stirs up what had settled out in the tank.

Our toilet and bath tub water are noticeably off color as of the last 2 days but we haven't lost electricity.

Any thoughts on what could be causing this?

When I lived in the hill country and on a well we would occasionally get discolored water and called it scale. If it was a tub or sink that wasn't used much it was worse. The well guy said that it was normal and to just run the water to flush it out. It wasn't harmful.

However, our drinking water was at a sink or refrigerator with a RO filter.

We haven't had any changes in usage and it's a 1 bathroom house, so not really sure why would be seeing this sudden change. I may run the tub faucet for a while and see if it changes anything.

Welp, our pump went out today so I think I've found my issue.

Have them install a killswitch (theres multiple brands out there) that turns the pump off if it pumps dry (if you dont already). Your water level may be dropping, causing the color change and ultimately the pump failure. Also get a quote for a storage tank with an aerator/sprayer. It helps the iron settle out.

New pump, new pressure tank, and filtration system are being installed.

Looks like the pressure tank failed and caused the pump to burn out.

I confirmed that the control box has an automatic shutoff if the water level drops below the pump. Thanks for that suggestion.
