We bought a remnant for a 36x22 single sink vanity top. The place we bought the remnant said they had a guy they trusted and he quoted me $375 just for the fabrication and installation.

We are in North Houston. What is a good price for a scope of work like this?

It's a small job and probably doesn't scale by size of slab vs a kitchen job.

Someone has to cut the sink out, grind an edge, load it up, take it to your home, install, caulk maybe?

$375 seems reasonable. I'm sure you can save a little by shopping around but it's your time, calls, someone possibly not recommended, etc.

I did the same thing as you. Got a remnant and had a guy come fabricate it. He charged me $250 to cut it to size, cut the sink hole, round all the edges, and install the undermount sink (I provided the sink).

So you may be able to find a little cheaper, but your price isn't that far off either. If it's who your supplier trusts, I would just go with their guy. That way if there's a problem you didn't have any input and can hold them responsible for fixing it.

Very good price. Do it. Renovated a small bath recently, needed a 33" x 22" granite top with splash, was $550 without installation, I did that part. Granite wasn't exotic, it was average, same general sq ft price as quartz. Again, good price IMO.
