We are replacing kitchen counters and will be replacing sink and garbage disposal at the same time. Currently looking at undermount stainless steel sinks. Something along the lines of this sink...

One thing to consider is the placement of your water in and drain out in comparison to where your new (and likely centered and lower) disposal will be. Sister did exactly what you did this past week and had to have a plumber come in because the new location of the disposal interfered with where her drain line entered the wall.

I got a new disposal two years ago.
