Wanting to split the water line into my gas water heater to the garage fridge for ice and water. I feel like this is possible however internet searches yield very little info. Thoughts?

Cut off the water at the the meter and bleed the lines by opening up faucets. Assuming the line into the water heater is copper, know how to solder in a T fitting. Then you're in business.

Is copper pipe stubbed out of the wall to the shut off valve ?
Is your current shut off valve brass ?

That looks like the gas line ?

The cold water line typically threads onto the top of the water heater, using flexible line. Buy a tee (or reducing tee) in the size of the flex line connection (often 3/4" FIP). Install that tee either (a) just downstream from the shutoff leading to the heater, or (b) just upstream where the line connects to the heater. Connect appropriate fittings to the branch of the tee to match your water supply line for your fridge.

You may have to thread together some adapters to get the appropriate male/female connections.

I would tap into the hot side. Hot water freezes faster.
