What's the best way to do it?

Get an international data plan? or get an eSIM card?

I have ATT. Just went last October. Used the ATTintl plan. Easy!

If you have AT&T it's $10 a day unlimited data and phone

I use a mix of T-Mobile and an eSIM through Alo (app) for data only. The data is cheap. Unless you're planning to make a ton of calls to Italian numbers, I really don't see a reason for getting an Italian number.

Another person who just does the daily AT&T rate. Now if I was going to be there 2+ weeks, I might look at another option.

Did the same in London last year. Phone worked just as it does in the US.

I think once you turn that option on with ATT, it's just automatic. Any time you connect to tower in a non US country, it charges you the daily rate and you are good to go. You can just leave it on.

If you are traveling with a spouse, you might just agree to only turn one phone on a day if you are trying to save a few bucks.

We were in Italy, Greece and Turkey last fall and I don't recall ever lacking cell service.

Another T-Mobile user with an iPhone. I did the E-SIM in France a couple of years ago, and that was the way to go. My T-Mobile plan had affordable international roaming (I want to say the only charge was per minute of phone call, or per text), but the data that was included was limited, and not sufficient for things like using your phone for navigation. Although I did Orange and had a French voice line, a French data plan would have been sufficient. With dual SIMs on an iPhone, you can still receive calls and texts on your US number, but also have a data plan with the best possible coverage.

We do eSIMs from BreezeSIM every time. Super easy to set up, but slightly higher touch than just doing the $10/day AT&T.

But if you have multiple users going, or are there for an extended period of time…

BreezeSIM per user - $20-30/unlimited for 30 days flat fee
Vs
AT&T $10/day X number of users

You can keep both lines on, and turn off the data on AT&T.
