Reccos needed - Tropical vaca with kids (not for kids)

This year, I am turning 40 and both parents are retiring. Would like to do about 5 days on a tropical beach vacation, with our two kids (6 years old), my wife and my folks. Any resorts geared towards kids are not the vibe we're going for. Resorts that allow kids is more what we're thinking. Airbnb is an option too.

This will be the first tropical vacation for my parents since their honeymoon, so there are some ideal attractions we would like to be options (all would be great, but a combination of these is good)
- decently close (3-4 hour flight, so Carribean is good)
- good baches
- shopping (for mom)
- casino (for mom and dad)
- inland/bay fishing (dad and I)...not deep sea or trolling
- something for the kids

Where my wife and I have been:
- Playa Mujeres - Stayed a couple times at EPM. Loved it but stayed on resort and from what I recall, its adults only. Not much to do outside of the resort that's safe and easy to get to.
- Bahamas - have been a couple of times, staying at Sandals and The Riu. Love the Bahamas vibe, good beaches, has casino options and Atlantis and Baha Mar. Decent shopping in town. Getting around wasn't the easiest though. Don't know about fishing options.
- Belize - Been twice and stayed on Ambergris Caye both times. Love the island vibe and the fact you can golf cart everywhere. Beaches were ok. Fishing was great. Not a whole lot for kids though.
- Isla Mujeres - Great beaches, good shopping, golf cart everywhere. No casino and not much for kids.

Would love to hear some recommendations for locations and places to stay that others have enjoyed.

Turks and Caicos would be a good choice. Easy flights. Lots of excellent bonefishing, Grace Bay Beach is one of the most beautiful in the world, plenty of shopping (nothing is cheap though), snorkeling/diving, a few casinos to choose from, and plenty of other things kids could be entertained with.
