France in August

My wife and I were supposed to go to France (Paris, Alsace, Burgundy) in 2020 and had to cancel due to COVID. We put it off last year but would like to get over there sometime this year. The only time that we know for sure that will work with our schedules would be the last week in August. We'd fly 8/28 and come back sometime the following week. I know that August is a big holiday month in France, so I'm concerned that we'd be there for a few days without much to do if things are closed for that reason.

Does anyone have experience traveling there in August, and if so what should we expect?

We were in France several times during summer, 2019. In July we were in Alsace (Colmar and Strasbourg). In August we stayed in St. Remy in Provence. After a side trip to Malta, we flew back to Marseilles and stayed in Aix. We rented a car both time in Provence and had no issues. Everything was open.

If you've never been, you'll love Paris and Alsace. I haven't been to Burgundy. It's on my list.

We were in Paris in late July of 2018 and man it was hot! Still had a great time but be ready for no AC virtually anywhere you go so there's really no relief.

We're looking at AirBnBs with AC. We've found several that are available as of now.

I'd do some research on specific places you plan to visit. I think you'll find the most of the tourist destinations will be open, but you'll probably run to some annoyances (places randomly closed) depending on where you are.
