Wife and I honeymooned here in 2011 and have gone back 2-3x, though not in the last few years. It's a great adults only AI with premium liquor and okay-decent food (never heard of an AI with food to write home about, maybe when one opens a chick fil a ha!). Like a poster said above, The hibachi Is good - note it is the only restaurant of several on property that kind of take a reservation (can go when dinner starts and put your name on the list for a later time)
The beach is probably better and definitely wider down in the Playacar area south of Playa del Carmen, but the VIM beach is still very nice and has less public and neighboring resort traffic. There are rocks in a portion the water in front but a short walk up the beach makes it a non issue. The main pool area is huge and the swim up bars are on the main pool so you don't 'have' to go over to a smaller /warmer/ pool to get drinks. There is also a quiet pool if the activities, music, etc throughout the day don't mix well with an afternoon nap/pass out
We have been to Excellence Playa Mujeres ( a very nice and popular place north of Cancun with great service), a couple different major chain resorts in Playacar and a Sandals in the Bahamas which was nice but crazy expensive. The VIM is still our favorite all inclusive for the atmosphere, beach, pool, service and booze.
