When we got called for this twice the other week, I found an article online that basically says, "The defense can not clap". I thought it was ridiculous. Kind of like the offense owns the right to clap...I will try and find it again, but it was one of those ex-refs that are now analysts that help the viewers understand the calls/rules.

Officiating and Coaching Guidelines: Clapping as a Defensive Team Signal Offensive and defensive teams may legally use a variety of signals in preparation for the snap. The offensive team has wide latitude in this regard, as long as the signals do not constitute a false start. I was in the room here one day... watchin' the Mexican channel on TV. I don't know nothin' about Pele. I'm watchin' what this guy can do with a ball and his feet. Next thing I know, he jumps in the air and flips into a somersault and kicks the ball in - upside down and backwards... the dang (sc) goalie never knew what the hell hit him. Pele gets excited and he rips off his jersey and starts running around the stadium waving it around his head. Everybody's screaming in Spanish. I'
