Grilling fajitas for 10-15 people....is there a mexican grocery store gem anywhere on N Side? I have used a couple before and it was hit or miss. I may just go central mkt but will cost a lot more and less convenient.

This is really easy to do yourself and comes out better than the pre-marinated Michoacana stuff:

Buy 1 flat iron steak for every 3 people, marinate in soy sauce and pineapple juice overnight (this is what Pappasitos does). Season with a little salt and pepper, grill to medium rare/medium. Will be better quality meat, taste better, and impress people more than the other stuff.

Great, thanks. Any marinade tips for some chicken breasts or same thing if I flatten them out? For the womens of course.

This is my brine recipe for chicken, best to do overnight as well:

Combine and dissolve:
1/4 Cup Kosher Salt
1/4 Cup Brown Sugar
1/4 Cup Lemon Juice
1/2 Cup Orange Juice
Add:
1/2 gal. Cold Water

Then salt, pepper, and if you want ad some taco seasoning (coriander, cumin, chili powder), but I like it simple salt and pepper. Cilantro and a squeeze of lime to finish.

Go to central market, buy fajita.
Squeeze fresh lime juice on one side, sprinkle lemon pepper and Tony's to taste.
Flip, repeat.
Grill over mesquite coals.
Profit.
Guaranteed to be one of the best tasting fajitas ever.
You don't need to get too gourmet with it, it's fajitas, used to be trash meat.

The pineapple juice/soy mix with salt and pepper on the flank was a hit. Turned out great. Thanks.

I'm all for doing your own marinades, but La Michoacana does have some good stuff if you don't have time to do it yourself. It does vary widely by location. The Oak Cliff and East I-30 locations are pretty good.

Just north of 820 on Main in Saginaw is a Carsonita (sp) with marinated beef and chicken for sale by the pound. I have used them several times.
