I dont know about price or what kind of enviro your looking for, but here's a few (might not have the correct name, i did many caterings so they all run together):

Knights of Columbus - NB by Landa Park and that old utility building. Near where wurstfest is.
Eagle Hall - NB between Pats place and the public library off of the road parallel to Common
Leon Springs - NE SA - used to be available for rent but i think its just for sale now.
Knibbe Ranch - out 281 Bulverde area - great setting (website)

I know theres several other ranch type places out 281, i just know of Knibbe since distant family owns it

If you are looking for a rustic setting you might check out Anhalt Hall in Spring Branch off of 46. It is a really cool 100 year old building that can be an awesome place for a reception.

I went to a wedding 2 weekends ago in New Braunfels, and the reception was at the NB Civic Center. I'd never been there before, but I thought they had it set up beautifully.

Good luck on the planning!

Oh, and I also went to one in NB at the end of December, and they had the reception at T Bar M. I'm not sure if they have bigger rooms available for the reception, but it was between 1/3 to 1/2 the size of the one at the NB Civic Center.

Seekatz Opera House near Scores is a nice place. I went to a wedding there about a year ago and it worked well.

We were going to get married at TbarM resort. They have a large outdoor pavillion that is the biggest place you can rent there. I thought they had horrible customer servie though. I had nothing but problems with them, and was glad when I could tell them to stick it where the sun dont shine. On the way back from Canyon Lake on Saturday, I noticed a new place was built for weddings and special events. I cant recall the name, but its on FM 2722 and looks like it has some really awesome hill country views. You can also rent out Wurst Hall, depending on how many people you have, and they are fairly inexpensive.

LGAggie, what kind of numbers are you expecting at your reception? Are you looking for elegant or more simple, or do you have no preference? And do you have a budget or are your fiance's parents loaded?

The answers to those questions will allow the rest of us to make more helpful suggestions.

-Spring Hill Event Center, just off Hwy 281, just South of Bulverde is a nice reception place....http://sanantonio.usaweddingmall.com/directory/index.cfm/page/storeFront/categoryID/8/vendorID/345/storeFrontLinkText/General%20Information

We are looking for as elegant as we can afford. The number will be 150-200.

Thanks for the help.

edit: And the budget...
We are trying to stay under 10 grand, but definately, absolutely, not more than 15. The parents aren't paying for it, unfortunately, we are, so cheap would be nice, but you only do it once (hopefully), so it has to be nice as well.

Also, if you have info on the place's food and/or alcohol policies, please post them as well. (outside caterers welcome? supply our own liquor?)

Thanks

Here is the list I promised:

Seguin:
KC Hall (more expensive then one in NB, smells like smoke)
McQueeney Lions Club (big and cheap)
The Silver Center
The Coliseum (huge maybe to big for your number)
Rio Cibilo Ranch (On the Guadalupe)

San Marcos:
Aquarina Springs (nice grounds)
SM Civic Center/Convention Center
Texas State Ballroom

New Braunfels:
KC Hall (where I had my reception, smoke free building)
Eagels Hall (not a lot of parking)
Wrust Hall (no AC!!!)
NB Civic Center
T Bar M (I have always heard good things)
Faust Hotel Ballroom (Downtown)
Seekatz Opera House (nice but too expensive for size)

Hope this helps...

Ditto on Spring Hill!! That's where we got married and everything was perfect. But I believe the head chef and coordinator lady we used were thinking of branching off to start a business of their own. I'd still really recommend them. If you end up using them, I would be more than glad to share all of my notes/info with you, as well as local cake, DJ, photo people.

we are going to look at seekatz, mckenna event center, and t bar m this friday. right now we are leaning toward seekatz b/c it is so interesting. i will email you mae_fly12 about possible caterers. the fiance called caterall and the prices are very reasonable. 17 per person for beef/chicken fajitas, sides, linen napkins, china, and silverware. and bartenders are only 20 bucks an hour, we provide the liquor. best deal we have found by far.

McKenna Event Center!
I had forgotten that one! It's a lovely site, so new and fresh, and dresses up beautifully! The Texas room (I think that's what they call it, the room in the front of the bldg.) has access to that little garden area in front for some versatility, too..

You could save between $5-7 per person if you just ditch the china. But if y'all are wanting china, then it's not a bad deal.
LGAggie
How long do you want to ignore this user?
you are exactly right about the china, but if we can afford it we want to have it. if the budget gets too tight, that will be one thing we will save on.

We used All Occasions (out of Seguin but they travel in area) and they were cheaper then Caterall (Caterall is a family member of mine). I do not really think that Cateralls food is that good anyways.
If you use All Occasions they have plastic fork and knifes that look real and you can get the clear non-divided plates.
If you email me we are family friends with All Occasions so maybe if you mention my name you might get a deal...

For anyone who is interested, we chose Seekatz Opera House in downtown New Braunfels. It is exactly what we were looking for, and I think if we hadn't seen all the other places first, we might not have known it when we saw it.

Thanks to everyone for their suggestions and help along the way, especially Maefly, who has responded very generously to my frequent emails.

Next on the list is the church. We are trying to stay close to the reception for the people from out of town, but are definately open to any OLD, NICE church that can seat 200 comfortably.

We have looked at the Protestant church, the Lutheran Church, and the Catholic church so far. We are leaning toward the Protestant.
nbbob
How long do you want to ignore this user?
Don't you need to be a MEMBER of the particular church to get married there? I would select a religion before a structure.
LGAggie
How long do you want to ignore this user?
In short, no.

At some churches you do, but at most they will rent the sancuary for a wedding. That is what we will be doing. Thanks for the help though...
nbbob
How long do you want to ignore this user?
My guess is Sts Peter and Paul wouldn't but I could be wrong.
LGAggie
How long do you want to ignore this user?
Yeah, St. Peter and Paul is the Catholic, and at least one of the people has to be Catholic to get married there. Too bad too. I bet they could make a mint renting it out for cerimonies. It was really nice.

I have heard that some churches where the preacher is included in the rental, if you have your own, the church will pay your preacher whatever part of the rental was for the preacher. In short, you don't just lose the money for their preacher if you have your own. The same goes for the musician fee. I was wondering if this is the case at First Protestant. In any case, the fiance will find out when she calls.

Here is a question worth alot of $$$. Can we negotiate with the rental place, the caterer, dj, and CHURCH? We didn't plan on having to pay for the church, so, paying as little as possible is prefferable (of course).
nbbob
How long do you want to ignore this user?
They could but they aren't in the facility rental business! I would suggest using the church that corresponds to you or fiance's religion and not worry as much about the architecture.
LGAggie
How long do you want to ignore this user?
the religion will be the same, regardless of the building. the ceremony will be the same regardless of the building. we want somewhere that is architecturally impressive.
mae_fly12
How long do you want to ignore this user?
Good luck on getting the prices for bulding to go down. I would think you can talk people down on the food and DJ. Most of the church rental prices are set in stone. Now my friend that I told you about that used Seektaz rented it for $1900, but that was last year so they might have gone up in price, but you can try if you didn't sign any papers yet. Once you sign they have you.
LGAggie
How long do you want to ignore this user?
my fiance just heard from first protestant that the price is the same whether we use their preacher and musicians or not. doesn't seem very fair, but it is their church and they can run it how they choose.

we are going to ask about 2000 instead of 2250 for seekatz. we'll see how that goes.

Salt Lick has a pavilion for weddings and receptionists in Driftwood.

Not sure how many Fischer store holds, but I have been to some receptions there that were very nice given the old, rustic theme. Plus, you can bowl next door.
