We've done Cavalry Court and Hotel McCoy as "staycations," and I have a 7 yr old and 12 yr old, similar to you. I've also been to and around The George (without the kids).
Cavalry Court would be my vote for your scenario. Everything you need on-site, for both Adults and the Kiddos, and plenty nice, without being "too fancy," if that makes sense.
There's also plenty to do and walkable, in Century Square, as opposed to Hotel McCoy (as mentioned), which is cool, but more limited.
If going during pool season, it's a little hit and miss on the kid vs. adult "vibe" at the pool, but the adult Guest(s) and Staff have been nothing but welcoming to my kids and me.
The Cavalry Court courtyard area, restaurant..which has live music on weekends, TV's for game-watching, board games for kids/adults and really good food…pool, fire pits/S'mores items available, cornhole boards, etc allows my kids to be…well…kids…and checks plenty of boxes for a Dad/Adult at the same time!
