I believe Cafe Eccell has gluten free bun and pizza options.
I have a co-worker that lunches with us here are her choices.

Fat burger on welborn used to have a gluten free burger and sell the gluten free beer

My MIL needs gluten-free options and she loves the options at Napa Flats.
We have a large selection of Gluten-Free items here at Boneheads from grilled chicken, grilled fish to our grilled vegetable, corn tortilla tacos (without slaw), salads and our hummus trio. Ask one of our staff members for out Gluten-Free menu and they will be glad to assist you!

Seconding Napa flats. My sister has Celiac's disease, and we always go there. They have an entirely separate menu with gluten free options. It's massive.
