Cornwellag - Let me preface by saying that at this point, I really don't care about Kolache Rolfs, but rather the fact that you have a sense of your last post being the definitive answer to any and all arguments before it. Your post and arguments just weren't THAT good. And your post assumes quite a few things.
It assumes that the employees have a passion for inventory control and doing what is in the best interest of the shop and the customers. All of your "YES" and "NO" answers that you emphasized in your post I just don't believe are that easy to make in such absolute truths.
Not that this makes me an authority on anything, and for all i know you may own both the Kalache Rolf locations, but I used to own 2 restaurants in College Station for about 8 years. Both locations were comparable to the size and volume of business to Kalache Rolfs.
I can tell you with certainty that just because I owned two locations did not mean that at all times there was a tight reign on food waste, "just in time" ordering, cost analysis - or anything else pertaining to running a tight ship. It also didn't mean that it was a successful operation simply due to having expanded to a second location. There was a direct relationship to the amount of time I spent in the shops and how well they were run.
I *think* the problem with Kalache Rolfs is the fact that the owner is not an owner/operator. I don't know this for sure, but it would surprise the hell out of me if he/she were.
I also *think* your arguments failed when you assumed the amount of care and attention that is given to inventory management at the locations.
The simple truth is that the locations may be not performing well and being run by college students that do not know how to run a shop and continue to misjudge ordering/cooking etc.. OR just simply are apathetic and just doing the bare minimum to get by.
Every argument I have made assumes Kolache Rolf wants and needs to make money and stay in business. There is the possibility that the owner is independently wealthy and the performance of the stores are inconsequential. If this is the case, then all bets are off.
