You have like two items that people actually order. Make a whole bunch of Slovacek and cheese so you won’t constantly be out of them. It’s the morning, we are in a hurry, and no we don’t want to wait 15 more minutes for the next batch. Does anybody actually eat those dried up egg sandwiches and dough balls with specs of ham in them that occupy space on your shelves from open to close?

Oh yeah, and stop telling me it’s still hot when you know deep down inside that it’s not.

Have to admit the wife went the other day and I was not impressed. 89 cents for a kolache that was little more than a mouthful. I could literally eat the whole thing in one bite.

We really need a good kolache place in town. I like Shipleys ok, but I'm not a donut kinda guy and their sausage kolaches are only so-so. At least they are decent sized if 80% bread.

We love the breakfast squares they have on, I think its Friday and Saturday mornings only, but they are often out when we get there. It does seem like they suffer some poor planning issues.

No issues with their kolaches. They are somewhat smaller than those my Czech grandmother used to make, but they are much more than a mouthful.

I wanted quick for lunch yesterday and was at university and bypass.... didn't want chicken e and bam there was a kolache Rolf with a drive thru. I don't think I had ever been for lunch so I tried it. ordering was weird ( guy handed me a green pad and told me to fill it out), it was about 1:40 and took forever to get my order BUT the food was good and the cookie was great. I'll go back.

Nah. Restaurant bashing is old news around here. Though there has been a marked shift in the whining from the prices, to absence or cutbacks on "freebies," to service related issues more recently.

Allonym - sorry man, but you are kind of starting to be like that jr. high ex girlfriend of mine that was clinging on a little too long and making everyone around her uncomfortable.

completely agree with OP - when my wife was pregnant she craved Kalache Rolf's a lot and EVERY time we went, they were out of 1 of the 2 things we would order. It became almost humorous. almost.

When your customer service is average at best, you really need to have all of your products available at peak hours on a weekend. BUSINESS 101.

There was a Kolache Rolf's truck at TexAgs HQ this morning dropping off free klobasnek as a bribe to get this thread taken down. They may have also added free kolaches to get posters banned too. Good day to you all.

Pseudo-kolaches w/Slovaceks's sausage Tues-Sat at ......Slovacek's in Snook!

And real kolaches much bigger than a big bite. I know, only us lucky ones west of the Brazos get to enjoy them (and co-workers when I'm feeling generous).

Love Kolache Rolfs and I too get upset when they run out of Dr Pepper! For a small business I understand if they run out of their product. How come no one gets upset if Fargo's BBQ runs out of their products? Same thing! Order something else or quit going to their business. If I don't like something I don't go back!

Good point. Why is it offensive if one place runs out of product but quaint and c'est la vie if another does? If it's that big of a deal, leave earlier.

The difference is in the prep time. You pull a bag of Dr Pepper syrup off the shelf and you have Dr Pepper in 30 seconds. You pull a piece of meat out of the freezer and you have brisket in several hours. Can't take but a few minutes (15?) to cook some kolaches either, shouldn't be too hard to see when you're running low and time to throw another batch in the oven.

redd - exactly. good bbq joints have a reputation of running out of food if you don't get there early enough and that they only cook so much for the day. seems that there is a mutual understanding of this with patrons. If this was not something that was as common between BBQ places, you would see more people object to it and make a fuss. AND.. there are still probably a good deal of people that do object to this business model.

In the same way that it would be absurd to go to Shipleys and them not have glazed donuts to sell, it is crazy for a place like Kolache Rolfs to not have the main product they serve.

I was told once that another batch of cream cheese kolaches would be ready in two hours. Not quite 15 minutes. Disappointed that I couldn't come back in 2 hrs but also didn't make me want to bash them either! And I have also been to Shipleys a few times when they didn't have the chocolate donuts I wanted. Baked goods run out just like BBQ.

armymom - you are missing the argument.

Shipleys running out of chocolate donuts is not the same as running out of the best selling and most popular items (glazed donuts)

Kolache Rolf's running out of pineapple or cream cheese is not the same as running out of the most popular item/s (regular sausage/cheese or slavacek and cheese)

I understand running out of a item that is not your "bread and butter" item. I just don't understand running out of what you are known for and what at least 75% of your customers buy repeatedly.

I just don't see how this is excusable for any business that is in business to stay open and make money. Prove me wrong.

I also want to remind you that this wasn't a one time occurrence for us. This happened over and over again. To the point it was *almost* comical.

talktalk - seems like bakery type places have a very tough decision to make when they are deciding on quantities.

do you think they want to run out of an item -NO of course not.

Do you think they want to have their items fresh for their customers - YES

Do you think they want to have lot of items left to throw in the trash - NO

do you think they have a system where they know that typically on thursdays (choose a day of the week) they sell X amount of each item -YOU BET

Do you think their items can just sit on the shelves for hours waiting for someone to come in to buy it - NO

Do you think sometimes there are abnormal demands for their products: YES


don't you think a business that has been around for a long time and has expanded can do a cost benefit analysis of how much product to make. YES

And as to BBQ, I believe that it is the causing of a deliberate shortage that increases a joint's notoriety. "We HAVE to get there early, other wise they'll sell out! It MUST be great, because they sell out so quick!"

If Rudy's only cooked 4 briskets a day, they'd have a line to Millican by 9 every morning.

Cornwellag - Let me preface by saying that at this point, I really don't care about Kolache Rolfs, but rather the fact that you have a sense of your last post being the definitive answer to any and all arguments before it. Your post and arguments just weren't THAT good. And your post assumes quite a few things.

It assumes that the employees have a passion for inventory control and doing what is in the best interest of the shop and the customers. All of your "YES" and "NO" answers that you emphasized in your post I just don't believe are that easy to make in such absolute truths.

Not that this makes me an authority on anything, and for all i know you may own both the Kalache Rolf locations, but I used to own 2 restaurants in College Station for about 8 years. Both locations were comparable to the size and volume of business to Kalache Rolfs.

I can tell you with certainty that just because I owned two locations did not mean that at all times there was a tight reign on food waste, "just in time" ordering, cost analysis - or anything else pertaining to running a tight ship. It also didn't mean that it was a successful operation simply due to having expanded to a second location. There was a direct relationship to the amount of time I spent in the shops and how well they were run.

I *think* the problem with Kalache Rolfs is the fact that the owner is not an owner/operator. I don't know this for sure, but it would surprise the hell out of me if he/she were.

I also *think* your arguments failed when you assumed the amount of care and attention that is given to inventory management at the locations.

The simple truth is that the locations may be not performing well and being run by college students that do not know how to run a shop and continue to misjudge ordering/cooking etc.. OR just simply are apathetic and just doing the bare minimum to get by.

Every argument I have made assumes Kolache Rolf wants and needs to make money and stay in business. There is the possibility that the owner is independently wealthy and the performance of the stores are inconsequential. If this is the case, then all bets are off.

If you go in the the store on University tomorrow you are likely to meet the "owner/operator". He's often there, at least when I'm fending off the hoard for a breakfast square on Saturday. You can easily ask his thoughts on your assumptions then.

mathdude69 - Didn't even know there was a Univ. Dr. location. Goes to show what I know. We moved away from College Station a while back, otherwise I would visit the location.

We always went to the location attached to Copy Corner on Tx Ave. and I can GUARANTEE we weren't being served by the owner (unless the owner is a 19 year old blonde/brunette).
