The near national holiday (Super Bowl Sunday) is almost here. What is your favorite food / dish for the game? I'm curious how creative people get for their SB party.

We've done a Big Game Party for Superbowl in the past. Everybody prepared food they hunted. Mostly venison, duck, quail, etc. Interesting, new foods/recipes to try.

Buffalo Wing Dip

2 - 8oz Philadelphia cream cheese packages
1 cup Kraft creamy blue cheese dressing
20oz of pre-cooked chicken (chopped very small or shredded)
1-2 cup Kraft shredded cheddar cheese
6 oz of Frank’s red hot sauce
1 pinch of chili powder (to taste)
6 to 8 jalapenos slices (optional)

Cut or shread pre-cooked chicken into small pieces.
In a bowl combine: cream cheese, blue cheese dressing, Frank’s hot sauce, and chili powder.
Pour cheese mixture into a serving dish and spread the chicken over the top.
Sprinkle with cheddar cheese and jalapenos on top.
Bake at 350 degrees for 25 to 30 minutes.

Serve it as a dip with your favorite tortilla chips.

(Option for those who don't like "hot" - substitute a bottle of sweet BBQ sauce for the Franks hot sauce.)

Bacon-wrapped stuffed jalapenos!

We brown up some ground sausage and add in various cheeses (my favorites are a combination of velveeta and cheddar). WE stuff the halved jalapenos with this and then wrap each in a full strip of bacon. Cook at 450 for about 15 minutes (make sure you use a broiler pan or grill them so the peppers don't get soggy). Then you are ready to enjoy!

I have some friends who have a crawfish boil every year and there is this one lady who brings stuffed jalapenos like no other. The peper is stuffed with cheese then it is wrapped in the sausage/cheese biscuit doaugh and rolled in shake and bake and baked in over - they are to die for.

I always associate wings with the superbowl for some reason.

Rotel Cheese Dip with a Twist

At the store, choose the regular Velveeta then choose two cans of Rotel. You can use the regular Rotel, medium Rotel, or hot Rotel. (I use one can of “regular” and one can of “hot” Rotel)One block of Velveeta along with 2 cans of Rotel makes a pretty large bowl of dip, so if it's just for a few people, you may want to just do half the block and 1 can.

Ingredients:

• A block of Velveeta cheese
• 2 cans of Rotel tomatoes
• 1 Red Onion (diced fine)
• 1 Jalapeno Pepper (diced fine)
• 2 Ripe Tomatoes (seeded and chopped)
• 1/2 Cup Fresh Cilantro (stemmed and chopped)
• Kosher Salt
• 1 tsp Garlic Powder (optional)
• A knife & can-opener & a spoon
• A large bowl
• Frito Corn Chips or Chips of your choice

Instructions:

1 Cut your cheese up into blocks with your knife, and put them in your bowl.

2 Open the can or cans of Rotel and pour them in as well.

3 Microwave on high for about 3-4 minutes at a time, taking it out each time and stirring. Keep this up until the clumps are gone.

4 Add the fresh ingredients, onion, jalapeno pepper, cilantro, tomato, garlic powder (if desired) and stir.

5 Add one or two teaspoons of Kosher Salt, to taste. Very important do not leave out, it ties everything together.

6 Get your favorite chips out and enjoy. (I think Frito’s go best)

Perini Ranch Shrimp Dip

2 8-ounce packages cream cheese
8 ounces sour cream
8 ounces picante sauce (I recommend Julio's if using store bought)
1 bunch green onions, chopped
1 pound cooked shrimp (peeled and deveined), diced small
Cayenne pepper (optional)

Blend the cream cheese and sour cream, then stir in the picante sauce and chopped green onions. Add the diced shrimp to the mixture. Add cayenne pepper to taste, if desired. Refrigerate immediately and serve chilled with crackers (I recommend Ritz). Garnish with 3-4 whole cooked shrimp and chopped green onion on top. Serves 20.

Armadillo Eggs!!!!!
can of whole jalapenos, mozzerella cheese, shake n bake pork seasoning and rolls of pork sausage
Slice jalapenos in halves (depending on how hot you want them, leave the seeds or take some out) and slice a little mozzerella and put in each jalapeno slice. Roll each half in pork sausage (again if you want these really spicy, use spicy sausage) Then roll sausage rolled jalapenos in pork seasoning and bake on 350 degrees for 45 minutes.
I usually use 1 large tube of sausage and a smaller one and a pound of block cheese and this usually make about 2 dozen depending on size of jalapenos.

We made a big batch of chili yesterday. Today I'll make some hot wings (Alton Brown's recipe) and cook some hot dogs on the grill for chili dogs. My cousin is bringing some ribs and hopefully the neighbor will make armadillo eggs!
