Actually that's pretty much Czech country too..Austin/Fredricksburg area would be a better bet.

Check Must Be Heaven in Brenham. That's a strong German town. If not MBH, you may find some other bakery that can accommodate you.
Fredericksburg is German Town, then you could hit New Braunfels or San Antonio - yes, I said S A they still have Catholic masses in German.

Let me edit before posting, Must Be Heaven is more of a sandwich shop, especially in Brenham. There is a bakery there that I can't remember the name of. If it comes to me, I'll let you know.

Try the Bryan High food services class, they may be willing to try baking it for you.
They made my birthday cakes a few times and did a very nice job.

If you're ever in the Killeen area, There's a good German food restaurant in Kempner called "The Brick Oven." Owned by German immigrants. There is also a bakery part to their restaurant.

Maybe the Brau Haus next to Murphy's Law in downtown Bryan. Their food is extremely authentic Bavarian fare. Bet they'd love to bake some kuchen. Makes me hungry to think about it.

Not in town, but you can try Moeller's Bakery in Houston (http://houston.citysearch.com/profile/9866606/houston_tx/moeller_s_bakery.html). Wide range of baked goods, so they might fit the bill.
